Makes purple colours, sweet and juicy carrots. Violet carrots contain much higher beta-carotene and carotenoid - lutein content than orange carrots.
They contain minerals, iron, phosphorus, magnesium, calcium potassium, as well as antioxidants that aid aging processes, improve vision and strengthen the immune system.
Carrots of this variety retain their purple tone after processing. With the addition of puree to different foods, you can change its colouring (such as pies or cakes)
