Yellow carrot roots are juicy, contain a lot of pigments that are very similar to beta carotene (xanthophyl and lute) -- and provide eye health, help prevent tumours in the lungs and other organs, reduce the risk of atherosclerosis because they strengthen the walls of the arteries.
Yellow carrots originate in Central Asia, so yellow carrots are very often mentioned in recipes for Central Asian dishes.
The yellow carrots are sown just like the usual oranges. Carrot seeds can be sprouted from +4 °C, but the best temperature for sprouting carrot seeds is +22-23 °C. carrot seeds are sown 2-2.5 cm deep on well-worked soils. Best if the soil has been dug up as early as autumn. Good soil working will guarantee the slipperiness of the carrot roots rather than the finching. Carrot sprouts tolerate small short-term frosts of 2-3 °C.
