Celery is very healthy. It contains coumarin, which delays cell damage caused by exposure to free radicals, thus reducing mutations that can lead to malignant cell development. Coumarin also boosts white blood cell activity, raising immunity to potentially harmful cells.
Vitamin C, which contains celery, also protects against the negative effects of free radicals by reducing conditions that cause inflammatory diseases such as asthma, osteoarthritis, rheumatic arthritis. The ingredients in celery, including vitamin C, also affect cholesterol levels, so it's beneficial for preventing cardiovascular disease. This vegetable is also an important blood pressure lowering agent because it contains a substance that helps relax muscles around the arteries, thus allowing blood to flow at lower pressure. Celery is a good source of potassium, calcium and magnesium, adding to the blood pressure lowering effect. The active substances in celery also reduce the effects of stress hormones. But potassium and sodium, which affect fluid balance in the body, stimulate urine production, helping the body get rid of excess fluid. However, it should be borne in mind that although celery is very healthy, in some sensitive people it may, like parsley belonging to the celery family, cause an allergic reaction.
Root celery has a very long growing season, so you need to grow the seedlings in advance. The very tiny seeds sprout slowly and the seedlings have to be grown long, so you have to sow as early as late February or early March when it's warm and light enough.
Fill the boxes with a finished peat substrate. Seeds are not incorporated into the soil (they should not be covered with peat) as celery is better sprouted in light. It is important to keep the soil humid and not salted all the time. When the first real leaves appear for the sprouts, they are pitched in cassettes or cartons 4-5 cm apart. Threads in a light, warm place (+20 … +22 °C), but after sprouting the temperature is lowered to +17 °C. They have been growing for at least two months and should therefore be discarded several times. First fed 10-15 days after pitching, then every 10 days. Alternately, complex fertilisers with calcium nitrate are used.
In the field, celery is exhibited in mid-May, when the plants have five true leaves. Doing so late (in June) will fail to grow enough roots. Seedlings are planted at the same depth as they have grown (If it's too shallow or deep, the plant may disappear after a while). The optimum planting distance is 50 x 40 cm. It's best to grow celery by pumpkin plants or cabbage plants. Unsuitable precursors include dill, carrot, parsley.
Root celery is great for drying, salting, creamy soups, stews and a healthy salad.
