‘Mary Washington’ is a classic and highly popular green asparagus variety that has been cultivated since the early 20th century. It stands out for its hardiness, generous yield, and excellent flavour, and it adapts well to various growing conditions — including the northern climate.


🩸 Nutritional Value and Health Benefits

Asparagus is a true world champion in folic acid content – a biologically active compound that plays a key role in cell regeneration, blood formation, and hormone production.
It also contains potassium and zinc, an essential component of more than 300 enzymes that strengthen connective tissues and blood vessels while stimulating brain activity.
In addition, asparagus is rich in vitamins A, C, E, K, and B6, as well as iron, calcium, and plant-based proteins, making it a valuable food for vegetarians and vegans.

Asparagus acts as a natural diuretic, helping the body eliminate toxins and excess fluids, thereby reducing swelling and supporting the prevention of urinary tract infections and inflammation.
Because of its detoxifying properties, asparagus is also considered an ideal “morning-after” vegetable to restore the body’s balance after festive evenings.

🌾 Cultivation and Care

Growing asparagus requires patience, but the results are rewarding.
Only young shoots at the sprout stage are edible, which is why a special earthing-up method is used to make the spears grow longer and more tender.

Harvest season: from April to the end of May – the time when asparagus is at its most delicious.

Growing instructions:

  • Sowing: in March–April, 1–2 cm deep

  • Seed preparation: soak seeds for 3–5 days before sowing

  • Germination: within 1–2 weeks at +16 °C

  • Planting: transplant seedlings into deep beds (up to 60 cm) with well-drained soil

  • Harvest: begins in the third year after sowing

  • Yield: very good – vigorous, fast-growing plants producing thick, straight spears


🌞 Growing Conditions

  • Light: full sun

  • Soil: light, fertile, and well-drained; pH 6.5–7.5

  • Moisture: tolerates short dry periods, but prefers evenly moist soil

  • Hardiness: excellent – overwinters well even in colder regions


🍽 Culinary Use

Asparagus can be enjoyed fresh, boiled, grilled, steamed, or roasted.
It’s a perfect ingredient for spring dishes such as soups, risotto, omelettes, and salads – or simply served with butter and lemon.
