Asparagus Argenteuil (Asparagus officinalis) – a classic French heirloom asparagus variety known for its early harvest, tender spears, and refined flavor. A perennial vegetable that thrives in Northern European gardens and brings a touch of French elegance to spring.

Latin name: Asparagus officinalis L.
Variety: Argenteuil

Argenteuil asparagus produces thick, juicy shoots with slightly reddish skin and pale green flesh. The tips are rounded with light purple scales. Its mild, nutty flavor makes it perfect for gourmet dishes and fresh spring meals.

🌿 Health Benefits

Rich in vitamins K, C, and E, folic acid, fiber, and antioxidants, asparagus supports bone health, digestion, and immune function.
Due to its high folate content, asparagus is recommended for expectant mothers. The antioxidant glutathione helps protect the body and skin from aging and environmental damage.

🌱 Sowing and Growing

Sow seeds from February to April in a warm place (18–25 °C). Germination takes 3–6 weeks.
Transplant outdoors from May to June in a sunny, well-drained, neutral soil (pH 6.5–7.5).
Do not harvest in the first year – let the plants establish. Harvest begins in the second year, from April to June.

💧 Care

Asparagus loves sunlight and loose, fertile soil. Water moderately and avoid waterlogging. In autumn, cut back dry stems and mulch the bed.
A well-kept asparagus bed will reward you for 10–15 years.

🍽️ Use

Asparagus can be enjoyed fresh, boiled, roasted, or sautéed. It’s perfect for salads, soups, and as a light spring side dish.
White asparagus is produced by mounding soil over the shoots to keep them from sunlight, resulting in a milder taste.
